While not fancy, the sour has a history, it belongs to one of the old families of original cocktails, appearing in Jerry Thomas’ 1862 drinks book alongside the other cocktail ancestors, the juleps, slings, cobblers and smashes that are mostly lost to the ages. When made right, the sour has a humble character, kind of subdued in the glass yet still flexing its tattooed biceps, just to keep you from mistaking it for a sissy. In New York City in 1874, a man became the most sought after, and despised person of the times, but no one ever met him. Tom Collins, as the story says, was a loud and boisterous man who was known to sit in taverns and talk harshly of nearly everyone he'd met, or in many cases, those he hadn't. Unsuspecting patrons were encouraged to find Collins and confront him; yet when they would go on their search he was nowhere to be found. The Great Tom Collins Hoax of 1874 permeated through the city as the search for a man that did not exist continued.

The Daiquiri is a simple variation of the classic punch - one sour, two sweet, three strong and four weak. What makes this drink an enduring classic is its perfect simplicity, with no off-putting unfamiliar ingredients, and the easily learned technique for making one. bramble
Created in the mid-80s by the legendary London bartender Dick Bradsell, this classic has been spotted on many a cocktail list around the world. This is a testament to its excellence, of both flavour and memorable naming. The simplicity of Tanqueray Gin, fresh lemon juice and simple syrup is served with crushed ice and sweetened with a Crème de Mure float.

The Sazerac is one of the oldest known cocktails, with its origins in pre-Civil War New Orleans. Our take on this classic has Hudson Manhattan Rye, Peychaud’s Bitters and sugar mixed then added to an Absinthe coated glass.

blood and sand
Created in 1922, for the premiere of the film by the same name, starring Rudolph Valentino, then the most successful actor in Hollywood. This unlikely combination proves once again that maybe those old folk knew a thing or two about drinks and drinking. The Blood and Sand cocktail calls for scotch, sweet vermouth, cherry brandy and orange juice.

Originally created by Hugo Ensslin in 1916, this drink was almost lost to the pages of time, when Crème de Violette disappeared from the market. Although the drink appeared in several distinguished cocktail books it lacked the magic of the original. It has now been revived with the reappearance of Crème de Violettte on the market. Tanqueray 10, Maraschino Liqueur, Lemon and Crème de Violette are shaken and served in a martini to create this amazing concoction.

corpse reviver no. 2
The reviver was popular during the late nineteenth and early twentieth century but began to die out after prohibition when complex “up” drinks went out of fashion, and now the category is all but dead. The Corpse Reviver No. 2 is a wonderfully complex drink, each ingredient clearly identifiable yet perfectly balanced with the others.

the coffee cocktail
In Jerry Thomas' Bartender's Guide (1887), the Coffee Cocktail made its first appearance in print with the note: "The name of this cocktail is a misnomer, as coffee and bitters are not to be found among its ingredients, but it looks like coffee when it has been properly concocted, and hence probably its name." Brandy, port, sugar and a fresh egg are combined with a touch of Morris Tokay to produce this misnomer of a cocktail. You have to try everything once.

armillita chico
According to Charles H. Baker, Armillita Chico was the idol of Mexico (well before Simon Cowell came along). Armillita was the foremost, most graceful, and most dramatic bull fighter in all of Mexico. Whilst playing about with tequila in a bar, Baker created this formula and dedicated it to Armillita Chico. Jose Cuervo Traditional is combined with a dash of Orange Blossom Water, Lime and Grenadine. Shaken and served long over crushed ice. Drink this to Chico, the Idol of Mexico.

Originating from the mythical home of rum, the Caribbean, the swizzle is due for a new lease of life. The Royal Gazette, the national newspaper has referred to it as "the legendary rum swizzle...perfect for sharing and irresistible to locals and tourists alike…” Why not, as the locals say swizzle in then swagger away. Taking Appleton Estate VX Rum we combine it with fresh lime, bitters and sugar and then swizzle away!

Yes, they are all Canadian, and now we add to another to this list with this whiskey inspired beverage. Canadian Club 12 year old is shaken with cherry brandy, orange bitters, marmalade. Served long with ginger ale.

With the Scots inventing just about everything it’s appropriate that we use one of most unusual of Scottish creations as a base for this potion. The healing potentials of Hendricks Gin are united with the curing power of Elderflower then mixed with the refreshing supremacy of cucumber and apples to give us a cocktail that any modern apothecary would be proud of.

treaty of locarno
The zip of cytrus, the tingle of ginger and the calming cardamom mingle to mainline this original straight to your heart. Belvedere Cytrus is combined with Canton Ginger Liqueur, fresh lemon and Cardamom Pods. Cherry brandy is floated into the drink for a final embellishment.

captain’s gone tiki
Many a sailor was heard to complaining about the captain after their daily tot was taken away. Celebrated every year on July 31 black tot day is the navy lost one of its oldest tradition. Join the navy in celebrating its greatest tradition and kick back and enjoy a touch of tiki on the Terrace. Using the original navy rum, Pusser’s, is combined with the tropical flavours of lychee, lime and pineapple. Macadamia liqueur and fresh coriander are added to spice things up a little and George’s own Grenadine is then added to sweeten up this potion.

Spring is in the air and who wants to spend all day in the office? This is a spring surprise that will refresh anybody after a long day on the job. A new player on the terrace, Square One Cucumber Vodka is mixed with watermelon, fresh lemon, George’s own Grenadine and our own blend of rose hip tea.

The rum that invented rum, Mount Gay has a history dating back beyond 1703. Go back to where rum began with this crisp cocktail. Fresh apple is caramelised, then muddled and combined with Mount Gay Rum, apple liqueur and fresh lime. Shaken hard then served. George likes playing with fire!
